Arisa-from fresh chilis

Arisa is the delicious spicy paste the accompanies a proper hummus or sabih dish. Berliners please note I'm not talking about the red sauce in Dönner places that isn't even spicy at all. This Arisa is not the green sauce you seomtimes get that maybe just have a hint of spiciness and is more of a herb sauce. Though this recipe, made from fresh chilis, is not only about being spicy but rather adds a whole variety of flavors to our dish. Also it can be done more or less spicy depends on what you use, I normally like to use Thai Chilis to get a bit of a sweat on, but for the picture here I used a three color mix of mild chilis. Honestly it came out very tasty, but not spicy enough so I recommend staying with Thai Chilis for what would be for me the perfect level of spiciness. If you are brave, try mixing Thai and Scorpion chilis to get a very spicy paste. Note that, as mentioned before, this dish is more than just about being spicy and so we want to make it spicy in a level that we can also add a nice amount of it to what we are eating.

Let's get to work:

100 grams Chilis of your choice(Thai Chili recommended)

4-5 garlic cloves

Bundle of cilantro

1/4 tsp cumin

1-2 pieces cloves

1 piece green cardamon seed

4-5 tbsp olive oil

1/2 tsp pepper

1/2 tsp salt


  1. Grind all the ingredients together until you get an even texture.

  2. Cook on low flame for about 20 minutes. The flame must be low! we don't want to burn the olive oil, only to cook the liquids out of the fresh peppers.
