Beetroot Black Bean Salad

Easy to make 4 ingredients salad. It is delicious and healthy too. Beetroot is rich in minerals, antioxidants and fiber and known to help the liver detoxify our body, Black beans are one of the best plant based protein source, and is also rich in antioxidants and minerals. The soluble fiber in black beans alsp helps clean our body from bad cholesterol and so reduce risks of heart disease.


Let's get to work:


1 can black beans

1 package (500 gram) cooked beetroot

1 onion

1/2 bundle parsley

2 lemons

1/2 tsp black pepper

1/2 tsp grinded coriander seeds

1/2 tsp cumin

Olive oil


Diractions:

  1. Cut the beetroot and onion to about bean size cubes. Chop the parsley.

  2. Mix all the ingredients in a bowl with juice from one lemon and about 4 tbsp olive oil.

  3. Let it sit for about 15 minutes. The lemon juice olive oil will moderate the onion flavor.

  4. Add juice from 1/2 a lemon and taste to correct flavors.

**Canned black beans are normaly very salty so try the salad first without adding any salt.
