Gnocchi in sweet potaot cream sauce

This creamy, delicious and simple dish is easy to make and you will not regret doing so.


Let's get to work:


The sauce:

400 ml coconut milk

300 ml water

500 gram sweet potato


In the pan:

1 big onion

300 gram white champignon

600 gnocchi

1 tsp black pepper

1/4 nutmeg

3/4 tsp salt


Directions:

  1. Cut the sweet potato into cubes and cook with the coconut milk and water until it is completely soft (about 40 minutes.)

  2. While the sweet potato is cooking fry the onion on a low flame until it is nice and soft, (we want it to melt in out mouth in this sauce,) adding the salt to help extracting more liquids from it.

  3. Add the mushrooms and cook until all the water from them evaporate.

  4. Then add the spices and gnocchi and cook for about 6-8 minutes.

  5. At this point the sweet potatos should be ready. Grind the sweet potatos with a hand mixer to get that perfect creamy texture.

  6. Now all you got to do is mix the gnocchi and the sauce.

For decoration and added flavor I added chives and sunflower seeds, I think other stuff like parsley, cilantro, sesame and pumpkin seeds could be just as good.
