Healthy Vegan Pancakes

Desclaimer- this pancakes, though I find extremely delicious, are not sweet.

I used this recipe during my time in university as kind of an healthy granula bar. The combination of nutrients in them has everything your body needs, and they are very filling but don't give a heavy feeling, so I found it very useful for school. Especially when my university was not rich in vegan options.

That being said, put some maple, chocolate sauce, blueberries or anything else you feel like and you won't even notice you are eating an healthy food(referring to a common mistake that healthy food can not taste that good).


Let's get to work:


200 gram oats

2 bananas

1 tsp cinnamon (ceylon) (optional)

1 tbsp vanilla extract (optional)

25-30 almonds

2 tbsp coconut flakes

2 tbsp flax seed

500 ml water


Directions:


  1. Grind the almonds, coconut flakes and flax seeds together well.

  2. Add the water and mix until you get an even liquid(how even it will be depneds on your mixer. I don't have a good one so don't worry ;).

  3. Put the oats, bananas, cinnamon and vanilla extract in a bowl and grind(I used an hand mixer) with the fresh vegan milk we did until you get a nice smooth mixture.

  4. Fry with a bit of coconut oil in a pan on medium heat. To prevent sticking put a bit of oil before every pancake. I used paper towel to spread it evenly without using too much oil.

  5. Put your favorit toppings and enjoy :)
