Majadra

This classic arabic dish is one of my favorite foods to make. It's easy and the rice lentils combo is not only delicious but also very nutrious, es it is a good portion of full protein, fiber(we will make it with whole rice) and vitamins. In this version we cook the Rice with the Lentils togther so that the Rice can absorb nutrients and taste the Lentils lose.

I would like to emphasize that it is better for both health and taste to soak legumes. Other than softening them it make the job easier for our stomach, both at absorbing nutrients and reducing gases.


Let's get to work:


1 cup brown lentils

2 cups wholegrain long rice or basmati

2 onions

4-5 garlic cloves

1 tsp thyme

1 tsp cumin

Salt and pepper to taste


Directions:


  1. Soak the Lentils for 6-12 hours.

  2. Fry the rice in olive oil for a few minutes.

  3. Add the lentils, thyme, cumin, salt and pepper and 5 cups of water and cook the liquids out (about 40 minutes).

  4. Meantime dice the onion and garlic and fry to the level you like. I enjoy them very soft but also a bit crispy from the outside. You can do it by increasing the heat for the last few minutes.

  5. When the liquids are out, mix the Rice and lentils and let it sit for 5 minutes.

  6. Place the onions and garlic on top and serve.
