Sweet potato peanut afircan stew

I encountered this stew first in the organic market where it was sold in a jar. It was a cold winter day and I knew I wanted to eat exactly that, but not coming from a jar. After looking online I found a couple of similar stuff but noon had exactly what I wanted so I had to make my own version of this delicious comforting food.





Let's get to work:


2 onions

1 bell pepper

2 carrots

5 garlic cloves

40 gram ginger

3-4 tomatoes

1 can of black beans

800 gram sweet potato

800 ml water

4 tbsp peanut butter

1/2 tsp cumin

1 tsp chili flakes

1 tsp black pepper

1 tsp salt

1 tsp dry thymian or handfull fresh


Directions:


  1. Chop all the vegetables to relativly big pieces

  2. Fry the onions and bell pepper for about 5-10 minutes in a big pot, add the garlic, ginger, carrots, tomatoes and spices and fry for another 10 minutes.

  3. Add the peanut butter, water and sweet potatoes and cook with the lid closed until the sweet potatoes are very soft, we want them to almost break with the lightest touch (about 45 minutes from the time the water boil.)
